How to Roast a Pumpkin

Have you ever roasted your pumpkins?

You know, sister, I’m always transparent.  The first time I discovered you could roast a pumpkin was when we lived in Germany when our weekly produce basket arrived on a Wednesday afternoon.

My first thought was, “Is this a pumpkin?”  Then, “What the heck do I do with a pumpkin?  Can I really cook this?”  And the answer was, “Yes,  Girl, you can totally roast a pumpkin!”

I could not believe how easy (and delicious) roasted pumpkin is! I never ate like this growing up. I just assumed it came from a can and went into a pie. (You too?)

By the way, my hubs says it only belongs in a pie at the holidays, but I beg to differ, and use this recipe for a Crustless “Pumpkin Pie” any time of the year!
Why do I even tell you that story?  Because, Giant Slayer, branching out and trying something new in my kitchen like this actually terrified me.  So, I want to share with you HOW to actually roast a pumpkin so that if this is a Giant you face in your kitchen too, then worry no more, because I got you, girl!

In case you want it in some plain font, just keep reading.


1. Wash these babies!
2. Rub ’em down with coconut oil.
3. Bake about an hour at 400*.
4. Remove from heat & let them cool.
5. Cut them in half, scoop ’em out. An ice cream scoop works perfectly!
6. Discard (or save to eat) pumpkin seeds.

I love to season my pumpkin with salt, pepper, and garlic (Aren’t those your staple seasonings anyway?).

Then I will add some of the following:
*coconut oil     *cinnamon      *roasted pecans

What  I love MOST about this recipe is there is very little prep, work, or clean-up. (#momvictory) And my house smells absolutely amazing on a cool, Autumn afternoon.

5 Tips and Strategies to Help Every Woman Get More Organized


Do you know one of those women who seems to be a Superwoman?  It seems that she can do it all!  I bet you could list a few of them right now off the top of your head.  Do you ever wonder how your Superwoman friend gets it all done?

I did for the LONGEST time.  I couldn’t fathom how women could work full time, run a business, mom-it-up, and not be exhausted!  (Do you think this way too?)

I want to share with you today a few tips that I’ve learned.  Although I am far from declaring myself Superwoman, I do wear several hats and I’ve had women ask me a lot the bewildered question, “How do you get it all done?”

I’m going to share with you a secret.  I don’t get it all done.

And this isn’t one of those times I’m trying to be humble.  I really don’t.  I accomplish a lot, but not everything.  And because I’ve learned a few secrets while wearing all these hats and still staying relatively sane, I want to share with you a few of my best tips and strategies.


Tip 1: Get a Chore chart & routine going ASAP.

Ahhhhh, chores feel so mundane, Steph! Why did you have to bring this one up first?

Because Sister, I’m telling you nothing is worse than battling others because your unspoken expectations go left unmet and the other people’s priorities leave you frustrated and feeling like you’re doing it all yourself.  Plus, the stress and time wasted about deciding who will do what and when it will get done is energy wasted that you could use to be loving on those very same people.  Use a Chore Chart.  Problem solved.

If you already have a chore chart, I bet you can attest to how much easier it has made your routines by freeing up time and energy in other areas of your life! If not, just swing by here to read how I do this & pick up my simple printable.  If you’re really serious, then you want the full workbook to create one for yourself.

Tip 2: Create Some Power Pockets

This means setting aside time each week to create three 10 minute power pockets to get yourself organized for the week. And for heaven’s sake, sister, use a timer so you are hyper-focused for each of these 10-minute pockets of time.  Learn more about these power pockets here in my Facebook video.  3 pockets.png

I created this simple bullet journal tracker that gives me a place to log all of this.   I do this every Sunday afternoon to save me precious minutes of sanity each day during the week.  It’s been a long time since I have struggled through morning routines, forgetting to thaw meat for dinner, or realizing that my clothes are still in the laundry.  This method, sister, has brought me a LOT of mental peace.

I don’t say this to brag, Sister.  I say this because it is totally possible to live a life with intention and overcome the overwhelm.  I say this because this tool has helped change my life. I say this because this tool can now be in your hands too.

Tip 3: Keep a running task list so you’re not stopping/starting all the time.

I use a grid method for this. Here’s how this works, divide your paper into quadrants (or pick up my bullet journal here) and write down all the things that need to be done. Each quadrant represents an area of your life that has tasks involved.  KEEP this list running all week, just highlighting items as you finish them.

The beauty of this method is that you’re not stopping/starting tasks continuously, but rather setting aside time to work on a task until it’s complete before moving to a new task. When an item comes up that needs to be done, just write it down. Go back to the task later when you assess how much time you need for this. PLUS, you never forget what needs to be done. Think Brain Freedom!  You do NOT keep thinking about the “to-do’s” because they’re already written down and you’re carrying them around with you.

Tip 4: Reclaim your mornings.

Seriously, get up and get going before anyone else needs you.  I highly recommend you read my post on how to create a Morning Action Plan.  It’s a Christian adaptation on Hal Elrod’s The Miracle Morning.  It’s all about using Spirit-led strategies to reclaim your mornings, spend time with the Creator, and fill your cup with self-care.  Check out my printable below!

Tip 5: Get grounded in your Faith.

Sister, there is nothing greater to help you overcome the overwhelm than to be grounded in your faith.  Knowing that our Heavenly Father has created you with a purpose, called you to live like you’ve been called out from the grave, and appointed you brings about a peace like nothing else I’ve ever experienced.  I’ve started sharing Godly Affirmations with you and plan to keep doing so to strengthen your mind and spirit in Him.  In the Word

Each morning, I’ve been using the “In the Word” printable I’ve shared with you, and I’ve found that as I’m starting my mornings with the Creator listening to His voice, my faith has deepened and I’m beginning to understand how in all things He’s working for me (Romans 8:28).

It is my prayer that you seek His love, wisdom, and grace.  Make this the foundation, then add the other tools with this and you’ve got a solid start on getting organized and becoming strategic and intentional with how you plan your week and live your days.

Crustless “Pumpkin Pie”

I don’t like to cook. 

I don’t like to cook.  <<Gasp.>> No really, it’s true.  I don’t like to cook elaborate meals with lots of ingredients.

When I say this, most women who know me have a difficult time believing that.  After all, on Sundays, I do consider myself a food prep queen.  (I promise to share more about food prepping tips soon!)

Sister, I have to keep my food prep and meals simple.  SIMPLE = SUCCESS.

A few years ago I started following this container system and learned a LOT about food prepping, tips, and changing habits to get my body down to a healthier weight.

So, when I tell you I don’t like to cook, what I really mean to say is, “I like quick and easy recipes that have good for me ingredients so my body FEELS good!.”

Enter Canned Pumpkin

So I know this time of year is all about the Pumpkin Everything.  (That’s just one reason I love Autumn.)  However, I limit my sugar intake because I feel icky with lots of that running through my system.  And, sister, do you KNOW how much sugar is in that pumpkin pie?

Maybe you already know this little tip I’m about to give you, but I have to share because I just discovered this idea: Crustless “Pumpkin Pie”.

Girl, if you love pumpkin, you gotta try this simple combo!


1 cup Pumpkin Puree (not pumpkin pie filling)

1 tsp Honey
1/4 tsp Cinnamon 
1/4 tsp Pumpkin Pie Spice


Place the above ingredients in a saucepan or microwave safe bowl.  Heat until it’s warm.  No baking required!  Top with 1/3 cup chopped pecans. Oh, and if you’re feeling a little awesome, toast those pecans in a skillet for a couple of minutes before you top.  WOW.

I don’t count calories, but containers.  So here is this Container Equivalent:  1💜+1💙
So easy.
So filling.
So #getinmybelly worthy.



It really is that simple, sister!  And I am full for hours!  This is how I keep my temple healthy.  I seek out ways to “fix” my faves!  And I promise to keep sharing these with you too!

In the Word Free Printable

The Inspiration

The other day I had a friend ask about HOW to study the Word because she was really struggling with focus and depth and applying the Word to her life.

I was thinking:

  • How do I study the Word?
  • How do I teach my students to focus and break apart texts in our classroom so that they understand what they are reading?
  • How do I share literature so that my students connect to what they read?

I’ve got a Master’s of Education with an emphasis in Reading so this part isn’t too difficult for me, but I don’t want to just write a study on what you should and shouldn’t understand about God’s Word.  I wanted to create a tool that could help women of any age or maturity deepen their walk with the Creator by breaking apart texts and focusing on what they need from the Word at this time in their lives.

The Focus Questions

I decided that there are three basic questions that I ask myself while reading scripture.  These are not the only questions or tools that can be used.  I have found that these are truly helpful for me no matter which passage I am working through each day.

After reading a passage, we can answer these questions to help us focus in Reflection:

1. What do I learn about God and who He says He is in this passage?
2. What blessings/promises are for me in this passage?
3. How could I bless someone or speak life into them based on what I’ve learned?

Questions for Reflection

Why These 3 Questions?

So HOW did I decide on these questions for reflection?  After all, there are literally millions of questions we can ask.  I kept hearing the words of Christ replaying in my mind when asked, “Which is the greatest commandment in the Law?”   

Jesus replied: “‘Love the Lord your God with all your heart and with all your soul and with all your mind.’  This is the first and greatest commandment. And the second is like it: ‘Love your neighbor as yourself.  All the Law and the Prophets hang on these two commandments.”

*Matthew 22:36-40 New International Version (NIV)

And then, the words of the Prophet Micah (6:8) kept coming back to me as well:

He has shown you, O mortal, what is good.
    And what does the Lord require of you?
To act justly and to love mercy
    and to walk humbly with your God.

So to me, it makes sense that these questions should reflect what we learn about God, His promises for me (so I can reaffirm who I am in Him to combat the Enemy’s lies), and how I can use this passage to serve others.

I love a bullet journal: the simplicity, the graph lines, the streamlined look without frivolity.  Oh, goodness Sister, this is MY heart in a nutshell.

A Better Devotional Page

Since I’m going to be using this page as a place for my daily devotional, I decided that it needed to have more ways for me to focus on other aspects of my spiritual walk.  I mean, if we’re going to have something that’s printable, why not dream big?!)

Godly Affirmations

  • I write daily a Godly affirmation to remind me who I am (stay tuned for a LOT more on this one!) so that I stay grounded.  This has been a pivotal shift for my mindset transformation (Romans 12:1-2).  So, sister, I had to include that for you too!

Daily Gratitude

  • After I worked through a gratitude challenge printable, I realized I wanted a place to record my daily gratitude to the Creator so I could see my blessings so of course I added this!

Intentional Serving

  • I wanted a place to be intentional in serving others through prayer and actions.  I have found when I write this out in my morning devotional time that I am setting my intentions for the day to seek ways to serve others.  *I will be writing a post on this one soon!*


  • Oh, counting our victories!  Aren’t they sweet to see?  I’ve learned through other printable tools that I created for myself for Overhauling the Overwhelm (I can’t wait to share more of this one with you!) that I need to write out daily victories.  I need to physically write out HOW I combatted the Enemy and came out the Victor through Christ.  Sister, if you’ve never done this, be prepared to have your eyes opened to building your confidence THROUGH Christ!  (EEEKKK!!!  This part makes me sooo giddy!!!)

Mom’s Best Chili

The Inspiration

I remember years ago when we were stationed at Fort Lewis, WA, my Superman did some crazy bike race and they served up the BEST vegetarian chili afterwards.

Picture this, a cold, damp, chilly, and foggy kind of day that folks who live around the Puget Sound know all too well.  This afternoon here in the middle of the woods in Arkansas, we’re having this same kind of weather and it made me nostalgic for this chili recipe that we fell in love with.

Although the Pacific Northwest introduced this delicious veggie chili to us and we sometimes use the Morning Star Veggie Crumbles, today we decided to go with some ground beef and venison (we live in AR, remember).

The BEST part

This chili is packed so full of vegetables and flavor that my husband declares it the best version I’ve ever made.  The blessings always come back for seconds.  I mentioned that this is clean eating & full of veggies right.  #sneakymomalert

Giant Slayer, double batch this baby and then put the leftovers in the freezer for a quick week-night meal this fall/winter.

Our Favorite Clean Eating Chili Recipe


  • 1 lb Ground Beef*
  • 1 lb Ground Venison*
  • 1 zucchini
  • 2 carrots (peeled & julienned)
  • 1/2 purple onion
  • 3-4 medium mushrooms
  • 1 cup corn
  • 6 oz. tomato paste


  • Garlic Powder
  • Chili Powder
  • Red Pepper flakes
  • Salt & Pepper


In a large wok or skillet, cook meat and then let drain.  Return to skillet or large pot.  Season with spices.  Chop and add all vegetables except corn and cook until vegetables begin to be tender.  Add tomato paste with 3 cups of water.  I make sure that the water covers all the vegetables.  Bring to boil, lower heat to simmer.  I let this simmer for 2-3 hours.  Then, I add the corn about 30 minutes before I am ready to serve so that it does not get too soft.

Optional Add-Ins

  • *Feel free to substitute ground pork or turkey or the Morning Star Veggie Crumbles for meat listed.
  • Canned beans of your choice are an excellent addition too!
  • Some days I add in extra chopped tomatoes.
  • We use Fage Greek yogurt and shredded cheddar cheese as toppings.
  • Serve this up with your favorite baked potato, crusty bread, or even over a bed of crunchy lettuce (yep, I’m serious).

Nutrition Information

Alright, sister, I quit counting calories years ago and instead use this container system. Here’s how I would count 1.5 cups of chili:  1 red, 1 green, 1 yellow.  If adding, cheese, I would fill up 1 blue container for this and feel NO guilt!

My Favorite Taco Recipe

In honor of all that’s holy about tacos (Tuesday or not), I have to share our go-to recipe!

WE LOVE TACOS! (Can I just say they are our favorite food!)



  • Meat of your choice. (I’m using leftover chicken from last night!)
  • 1/2 red (or yellow) onion chopped
  • 1 tsp minced garlic
  • Tortillas…. (I prefer whole wheat flour)
  • Spices
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp crushed red pepper flakes
  • Brown Meat and add in spices! Remove from skillet. Set aside. I usually set these in the oven to stay warm.

Add vegetable oil to skillet to heat. (I use 1 tsp per shell)

When oil is hot, add in tortilla, brown on each side and fold. Place on paper towel to help absorb any last oil.

Taco Toppings

  • Shredded romaine lettuce
  • Chopped tomatoes
  • Chopped onions (red and/or yellow)
  • Chopped green onions
  • Chopped cilantro
  • Greek yogurt *instead of sour cream*
  • Sliced avocado
  • Shredded Colby jack cheese

Side options

  • We had leftover corn from the cob from the evening before so I cut it from the cob and served it as a topping as well.
  • Black beans with a squeeze of lime and cilantro are delicious too.
  • Fresh bell peppers make an excellent choice to keep the meal light and not so heavy!
Time Saving Tip for Taco Tuesday
TIME SAVING TIP: Cook a double batch of meat the day before and use the leftovers to get this on the table quickly for your crew!

**ONE LAST NOTE…. These tacos are delicious with leftover pulled pork or beef roast, shredded chicken, or even venison as a quick evening meal with leftovers!**

Thankfulness and Gratitude Challenge

I choose JOY.

Giant Slayer, Thank you for reading and joining me in this journey to choose joy and glorify the Father here on earth. Together, we spur on another forward!

I must confess though, I am was a complainer. (Still working on this mindset shift!) For years, I struggled with JOY.  It seemed elusive.  How could I actually claim this second fruit of the Spirit in my life?

I envied other’s womens’ joy.  I would see them with their husbands, children, jobs, etc. and I couldn’t fathom how they could be so joyful!  #trueconfessiontime

Finding Joy in my journey seemed difficult until I started practicing daily gratitude.

I’ve gone through several phases of my life like this in which I fall trap to focusing on the lack of “what I don’t have”.  And you know what, sister?  Joy was elusive because I was focused solely on “me, my, and mine.”  (#ouch)


I spent time comparing instead of serving.  I spent time complaining instead of praising.   I spent time focused on lack instead of His abundance.

I didn’t know that the key to having JOY in my journey was to truly be thankful to the Creator fall all that He blesses me with! 

How to Change that Mindset

I decided to write down daily what I was thankful for each and every day.  I wrote out the big and the small.  Things as simple as a cup of my favorite coffee and quiet time that I could spend in reflection.  Some days I wrote out my goals embedded with what I’m grateful for right now (that’s another blog post btw).  Other days it was HUGE blessings of the ability to share His love through this blog.

Here’s what I began noticing, I was transforming my thinking (Romans 12:2) by taking the time to FOCUS on His abundance and blessings in my life.  I was creating a daily “pause” to pull back the curtain so His glory in my life was shining through.

The Gratitude and Thankfulness Challenge

I want that mindset shift for you too, Giant Slayer.  I want you to see HIS glory shining through in your life as you thank Him daily for abundance.  Sister, you are alive.  You are breathing.  You are loved by the most High.  You are His precious daughter.  There is so much JOY to be found in counting your blessings…even the small ones!
